The choice of colloid or the mixture thereof decides on the structure of the final product:
Gelatine ' long, chewy and clear;
Gum Arabic ' hard and clear
Pectin ' clear and short;
Agar agar ', short and harder;
Starch ' cloudy and varying from soft to hard;
Carageenan ' clear and soft.

Here relative humidity, temperature, air speed and residence time are electronically controlled so the whole process can be monitored from start to finish to give the optimum final product.
